Cathy's Lower-Cal Version of "Joan's Broccoli Madness"

Ingredients:
10 to 12 cups of broccoli florets
¾ c diced red onion
3 oz. crumbled bacon
¾ c sunflower kernels
1 c raisins
6 packets of Splenda
2 c fat-free mayonnaise
6 tbsp white vinegar

Directions:
1. Blanch 10 to 12 cups of broccoli florets. To do so, bring a large pot of water to a strong boil. Add broccoli, and boil for approximately 2 minutes.
2. Drain broccoli, and immediately immerse into ice water.
3. Drain again, and mix with onion, bacon, sunflower kernels, and raisins.
4. Combine Splenda, mayonnaise, and vinegar in a separate bowl to create dressing.
5. Add dressing to the broccoli mixture, stirring or tossing well to coat.
6. Refrigerate until well-chilled, and enjoy!





NOTES:
I think that the above recipe is too heavy on dressing. Add the dressing gradually, and judge for yourself whether or not you'd like the full amount.

Also, if you'd rather make it, well, NON-lower-calorie, use real mayonnaise (instead of fat-free), cashews (instead of sunflower kernels), and sugar (instead of Splenda).
