Cathy's Lower-Cal Version of "Joan's Broccoli Madness" (See Notes below for non-lower-calorie ingredients and information.) Ingredients: 10 to 12 cups of broccoli florets ¾ c diced red onion 3 oz. crumbled bacon ¾ c sunflower kernels 1 c raisins 6 packets of Splenda 2 c fat-free mayonnaise 6 tbsp white vinegar Directions: 1. Blanch 10 to 12 cups of broccoli florets. To do so, bring a large pot of water to a strong boil. Add broccoli, and boil for approximately 2 minutes. 2. Drain broccoli, and immediately immerse into ice water. 3. Drain again, and mix with onion, bacon, sunflower kernels, and raisins. 4. Combine Splenda, mayonnaise, and vinegar in a separate bowl to create dressing. 5. Add dressing to the broccoli mixture, stirring or tossing well to coat. 6. Refrigerate until well-chilled, and enjoy!
